Research Interests: 

Dietary change to reduce risk for chronic diseases, especially as relating to fruit, vegetable, low-fat dairy and whole grain foods. Evaluation of nutritional status and food behaviors.

Instructional Activities:

HNF 375 – Community Nutrition

Use and interpretation of dietary and anthropometric assessments; community nutrition programs at the local, state, federal and international levels; communication techniques; and nutrition policy.

HNF 475 – Nutrition Applications in the Community

Application of nutrition care process in community setting with two options:  1)  Dietary intervention with collegiate athletes or 2)  with limited income families. Nutrition education to practice written and oral communication skills, with specific attention to cultural diversity.

HNF 843 – Community Nutrition Assessment

Graduate course: Discussion and practice of methods for assessing nutritional status-anthropometric, biochemical and dietary assessment. Use and interpretation of nationwide surveys and demographics and development of a community nutrition assessment proposal for a domestic or an international setting.

HNF 891 – Health Behavior Change: Theory & Practice

Graduate course:  Addresses and applies major health behavioral theories to interventions for improved health and reduction of dietary risks for chronic diseases. A special focus is measurement in and evaluation of such interventions.
